BACON AND MUSHROOM FRIED RICE

BACON AND MUSHROOM FRIED RICE 
INGREDIENTS:

Mushrooms  – 200 gms, sliced

Leeks – 3 to 4 stalks, finely sliced

Onion – 1 large or 2 medium, finely chopped

Bacon – 8 to 10 slices, thick cut, chopped

Groundnut Oil – 3 tblsp

Garlic  – 5 cloves, minced

Ginger – 2 tblsp, finely chopped

Carrot  – 1, large, finely sliced

Green pies – 2 cups

Rice – 4 to 6 cups, cooked

Soy Sauce – 2 to 4 tblsp

Eggs – 6, beaten

Salt as per taste


METHOD:


1. Heat oil in a pan over medium flame.

2. Cook the bacon for 10 to 15 minutes until the fat comes out.

3. Keep aside the bacon and bacon fat separately.

4. To the same pan, add bacon fat and onions.

5. Saute until the onions are soft.

6. Add leeks, ginger and garlic.

7. Cook for 2 minutes.

8. Now add the mushrooms, carrots, bacon and salt.

9. Stir well and cook for 5 minutes.

10. Add peas, rice and soy sauce.

11. Mix well and add the eggs.

12. Stir until the eggs are set and mixed evenly.

13. Transfer to a serving bowl.

14. Serve at once.
